ho doesn’t love Caesar Salad? And you can’t have a great Caesar Salad without a great Caesar Salad Dressing. Right? Here is the best one we have tasted – it’s rich, tangy and packed full of flavour. Put it on your traditional Cos Lettuce Caesar Salad with all your favourites additions… crispy bacon, fresh shaved parmesan, crunchy croutons, anchovies, fried egg, grilled chicken or prawns – what ever you like!

1 tablespoon dijon mustard
1 clove garlic – crushed
4 anchovies – mashed
3-4 tablespoons lemon juice
1/2 cup Penfield Olives Extra Virgin Olive Oil
1/4 cup white vinegar
Carefully place whole egg (in shell) into boiling water and remove after 45 seconds. Remove egg from shell and whisk in a blender. Add mustard, garlic and anchovies. Blend. Add lemon juice oil and vinegar. Blend, bottle and refrigerate.
To build the perfect Caesar Salad, we like to toss freshly torn Cos Lettuce leaves in the dressing, place a layer onto serving plate, top with freshly shaved parmesan, crispy bacon and croutons. Repeat this layering process and finish off topped with bacon, parmesan, croutons, anchovies, egg, cherry tomatoes, grilled chicken or prawns, and another drizzle of dressing.
